-- GREEN TOMATO BREAD
2 eggs
1/2 c. sugar
1/2 tsp. vanilla
1/2 c. oil
1 c. green tomato, blended
1/8 tsp. baking powder
1 1/2 c. flour
1/2 tsp. soda
1/4 tsp. salt
1 tsp. cinnamon
1/2 c. brown sugar

Mix all together. Bake 1 hour at 325 degrees.

1 c. oil
3 eggs beaten
2 c. sugar
2 tsp. vanilla
2 c. ground green tomatoes
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 tsp. pumpkin pie spice

Preheat oven to 325.

Combine all ingredients in order. Pour batter into 2 greased loaf pans. Bake for 1 hour until done.

Variation
Use 1 cup of green tomatoes and 1 cup of grated apples.

WET INGREDIENTS:
3 eggs
1 1/2 c. sugar
1 c. oil
1 tsp. salt
1 tbsp. vanilla
2 c. grated, drained green tomatoes

DRY INGREDIENTS:
3 c. flour
1 1/4 tsp. soda
1/2 tsp. baking powder

LAST ADDITIONS:
1 c. chopped nuts
3/4 c. raisins

Preheat oven to 350. (Makes two loaves.(

Beat eggs well. Add sugar, oil, salt, vanilla and tomatoes.

Sift dry ingredients together.

Gradually add to tomato mixture.

Stir in raisins and nuts and pour into greased bread pans and bake for 45 minutes


GREEN TOMATO BREAD

3 eggs
1 1/2 c. sugar
1 c. oil
3 c. flour
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. baking powder
1 tsp. soda
2 to 3 c. green tomatoes, chopped, drained
1 c. nuts
1 c. raisins
3 tsp. vanilla

Preheat oven to 325.

Combine eggs, oil and sugar; mix well. Add dry ingredients; mix well.

Add tomatoes, vanilla, nuts, raisins.

Pour into greased and floured loaf pans (2).

Bake for 1 hour.

GREEN TOMATO BREAD

1 c. Crisco oil
3 eggs, beaten
2 c. sugar
2 tsp. vanilla
2 c. ground green tomatoes
3 c. flour
1 tsp. soda
1 tsp. salt
1/4 tsp. cloves
1/2 tsp. baking powder
2 1/2 tsp. cinnamon
1/4 tsp. nutmeg
Nuts & raisins (opt.)

Preheat oven to 325.

Stir together oil, eggs, sugar, vanilla and green tomatoes.

Sift together remaining ingredients. (Pumpkin pie spice can be used instead of the cloves, cinnamon and nutmeg, using 2 1/2 teaspoons.)

Add the dry ingredients, then pour batter into 2 well oiled loaf pans. (Can line pans with wax paper.) Bake for 1 hour.


GREEN TOMATO BREAD

2 eggs
1/2 c. firmly packed brown sugar
2/3 c. apple cider or apple juice
2 1/4 c. all-purpose flour
1 1/2 tsp. baking powder
1 tsp. soda
1/3 c. melted and cooled margarine
1/2 tsp. salt
1 1/4 tsp. cinnamon
1/2 tsp. ginger
1 1/2 c. seeded chopped green tomatoes
3/4 c. chopped walnuts

Preheat oven to 350.

Sift together flour, baking powder, salt, soda, cinnamon.

Beat eggs, sugar, butter and cider; add flour mixture. Stir just until blended.

Fold in chopped green tomatoes and walnuts. Pour batter into greased and floured loaf pan.

Bake for 55 minutes or until wooden pick inserted in center comes out clean.

Cool bread in pan 10 minutes; remove from pan and cool completely on a wire rack. Yield: 1 loaf.

GREEN TOMATO SPICE BREAD

5 c. unbleached, sifted flour
5 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 c. brown sugar, packed
4 tsp. cinnamon
1 tsp. powdered ginger
1 tsp. allspice
1/2 c. honey
1 c. vegetable oil
2 c. chopped green tomatoes
4 eggs
1 c. chopped walnuts
1 1/2 c. raisins
2 tbsp. grated orange peel

Preheat oven to 350 degrees. Sift together all dry ingredients.

In separate bowl, mix remaining ingredients. Beat well.

Grease (3) 9 x 5 inch loaf pans and divide batter into them.

Bake 45 minutes or until toothpick comes out clean. Loaves may be stored frozen and thawed before serving.
