Bread Hawaiian Sweet Bread

HAWAIIAN SWEET BREAD

1 cup mashed potatoes
3 Tablespoons sugar
2 pkgs dry yeast
1/2 cup potato water (water from cooked potatoes)
1/8 teaspoon ground ginger
1/2 cup milk (scalded and cooled)
2 teaspoons salt
6 eggs
1 3/4 cups sugar
1/2 cups butter (melted)
8 cups flour,divided

Cook potatoes and reserve water.

Add sugar and yeast to potato water. Stir until dissolved.

Blend in potatoes and ginger. Set aside and let rise until doubled in bulk (about 5 or 10 minutes).

Scald milk. Melt butter and set both aside to cool to lukewarm.

Beat eggs and add sugar gradually while continuing to beat.

Stir in cooled butter. Combine yeast to egg mixture. Blend. Stir in 2 cups of the flour, add milk and beat. Add 2 more cups of flour.

Beat 5 minutes. Add remaining flour gradually, kneading when< dough becomes too stiff to beat.

Turn out of floured board and knead 10 minutes, adding only enough flour to prevent sticking.

Place dough in oiled bowl, cover and let rise until doubled. Divide into 4 portions. Shape into round loaves or 5 x 7 greased bread pans.

Allow to rise. Brush with beaten egg.

Bake 350 degrees for 40 to 50 minutes until browned.
