Mike’s Bread
(bread for those watching fat intake as well as sugar--this is just excellent!!!!)
1 cup uncooked cornmeal
1 cup uncooked cracked wheat
1 cup uncooked regular oatmeal
2 Tbl. yeast
1/2 cup honey
2 cup whole wheat flour
6 - 8 cup white flour
Heat 4 cups water to boiling. Pour over cornmeal, cracked wheat and oatmeal in a large bowl. Add 2 cups warm water and honey. When mixture is cool enough to add yeast, do so. Add wheat flour and mix well. Slowly add white flour and knead well. Dough will be smooth but still somewhat sticky.
Place small amount of oil in bowl to oil sides slightly. Let rise 1 hour or till doubled in size. Punch down and knead again. Place in 4 well greased loaf pans and let rise again.
Bake in 350 degree oven about 25 - 35 minutes. Cornmeal makes a crunchy crust. Center is a delicious nutty sponge texture. I assume oatmeal provides the "oil" needed.
Used this to make a hamburger rollup--roll or spread onto large jelly roll pan, cut in two across short way so have about two equal pieces.
If you wish spread some olive oil on, then sprinkle with Italian seasonings or other spices. Cook 1-2 lb. hamburger and/or sausage with veggies: onions, carrots, peas, mushrooms, celery and some garlic. Spread this over the bread. Can add eggs into mix if wish and cheese. Roll each piece up and seal--this is just delicious. Can wash with egg if wish and sprinkle with sesame seeds.
