Mom's Salt Rising Bread

To get the starter going:
4 white potatoes peeled and sliced
1 tsp. sugar
4 cups boiling water
3 tblsp. cornmeal (yellow)
1 tsp. salt


Add all of these into a large crock bowl. You need to either cover with a heavy bath towel and place in a warm spot or rig up a warm water bath using a crock pot, or heating pad. This mixture needs to stand overnight, or more. It will take on that aroma and become bubbly. Don't rush this step.

When the starter is ready, remove the potatoes. Add:
2 cups scalded milk
1/8 tsp. baking soda
1 cup lukewarm water
2 tblsp. shortening


Then begin adding your flour until you have a stiff dough. Knead until smooth and elastic. Shape into three loaves and place into greased pans.

Cover and allow to rise until double in size.

Bake at 400 degrees F for about 45 minutes

Note: Since taking the King Arthur Flour baking classes, I check the internal temp., it should be
between 190 and 205F.
