OATMEAL BREAD
2 cups boiling water
1 cup rolled oats, regular or quick
1/2 cup molasses (or 1/2 cup brown sugar or honey)
2 tsp salt
1 Tablespoon butter
1/2 cup lukewarm water
1 pkg. yeast
4 1/2 cups flour
PUT IN A LARGE MIXING BOWL:
The water and oats. Stir thoroughly. Let stand 1 hour.
ADD:
The molasses;salt; and butter
MIX TOGETHER IN A SMALL BOWL:
The water and yeast. When dissolved, add to the oatmeal mixture. Stir in
flour
PROCEDURE:
Add enough more flour to make the dough just firm enough to knead.
Beat thoroughly and let rise until double in bulk.
Shape into loaves and put into buttered pans. Let rise until almost
double in bulk.
Bake about 50 minutes at 350 degrees. Makes two loaves.
VARIATIONS:
Prune Oatmeal Bread
After the first rising, add 1/2 Cup chopped nuts
and 1 Cup prunes cut into pieces.
Adama Bread
Use 1/2 Cup cornmeal in place of the cup of oatmeal.
