Potato Bread (Large loaf)
1-2 potatoes (will need 1/2 cup mashed potatoes)
3/4 cup potato water
1/4 cup butter
1 egg
2 tablespoons sugar
1 teaspoon salt
3 cups bread flour
2 1/2 teaspoons yeast
Start by boiling 1-2 peeled potatoes. Save the water to use in the bread
(If you don't have quite enough potato water add water to make 3/4 cup.)
Then mash the potatoes, without milk or butter, and let cool to lukewarm
or room temperature (make sure potato water is room temperature also.).
If you make it in the bread machine, make it on the white bread setting. using the dough cycle
and turning it out onto a lightly floured board (dough will be sticky.)
Knead for about 1 minute, adding extra flour as needed to keep from
sticking.
Preheat oven to 375.
Form into a loaf and put into a greased bread pan.
Bake for about 30 minutes.
