Robin Hood Bread

1-1/2 cups warm milk
2 tbsp.butter
2 tbsp.sugar
1-1/2 tsp. salt
5-1/2 cups flour
1/2 cup warm water
2-1/4 tsp. dry yeast


Mix all dry ingredients in a large bowl. Add soft butter. Add milk and mix, either with hand mixer (dough hooks) or machine or by hand, adding remaining water if necessary. It should be a smooth, soft but not sticky dough. Form into a ball. Cover and let rise until doubled.

Punch down and divide in two parts. Form each part into a ball, flatten a little and put in a freezer bag. Freeze immediately. This might not be the perfect "right" direction, you will find more complicated ones all over the web, but it's tried and true and has never let me down.

If you need it let dough thaw (maybe overnight in the fridge) and come to room temperature. Shape and continue baking and stuff according to your recipe .
