Ingredients:
1 cup milk, scalded
1/2 cup coarse corn meal
3 cups lukewarm milk
3/4 teaspoon salt
1 tablespoon sugar
5 tablespoons lard
3 1/2 cups bread flour, sifted
5 cups flour

Method:
Scald 1 cup of milk and pour over corn meal.
Let it stand in a warm place until it ferments, about 24 hours. Keep it warm.

Heat until lukewarm, 3 cups milk, salt, sugar and lard; stir in 3 1/2 cups bread flour.

Stir in corn meal mixture. Place the bowl with the mixture into a bowl of lukewarm water for about 2 hours, until bubbles work up from the bottom.

Stir in 5 cups flour.

Place dough in 3 pans and let rise until double its bulk.

Bake at 350*F (180*C) for 15 minutes. Increase heat to 425*F (210*C) and bake 1 hour.
