1/2 c melted butter or margarine
1/2 c sugar
2 c flour;divided
1 tbsp milk
1/3 c fruit (white raisins, seedless raisins, currants, chopped candied cherries) OR 1/4 c shredded coconut, or flavoring;finely chopped orange or lemon rind, cocoa, or coffee powder)
Preheat to 375. Baking shelf should be just above center of oven.
Cream together butter and sugar until light and pale colored.
Add 1/2 c flour and 1 egg, fold in then beat well.
Add 1 c flour and 1 egg, again folding in then beating well.
Beat remaining flour in a little at a time until a stiff batter is formed.
Stir in fruit, coconut or flavoring and milk.
Divide mixture among 12 muffin pans and bake for 15 minutes, until golden and just firm to touch.
Cool on a wire rack.
