Bread in a Bag Honey Wheat Bread

2 cups all-purpose flour;divided
1 package active dry yeast
1 1/4 cups warm water;divided
2 tablespoons honey;divided
2 tablespoons nonfat dry milk powder
1 tablespoon vegetable oil
1 1/2 teaspoons salt
1 3/4 cups whole wheat flour
In a large heavy plastic bag (gallon size), add: 1/2 c. all purpose flour,
1 pkg. yeast, 1/2 c. warm water, and 1 tbsp. honey.
Blend with fingers until mixed. Let rest 15 minutes. Mixture should be
very bubbly.
Add to the ingredients in the bag: 3/4 c. warm water, 1 Tbsp. honey,
2 Tbsp. dry milk, 1 Tbsp. oil, 1 1/2 tsp. salt. Mix well with fingers
then add: 1 1/4 c. whole wheat flour.
Gradually add: 1 c. all purpose flour. Work dough until flour is well
blended. If the dough is sticky and won't pull away from the sides of the
bag, add a little more flour - about 1/8 c. Be cautious!
If you add too much flour the dough will be stiff.
Turn dough out on a lightly floured surface. Knead dough until it is
smooth and satiny - about 10 minutes. You cannot over-knead the dough.
The dough should feel light and spongy. If it is sticky, add a little
more flour.
Cover dough with plastic bag and let rest 10 minutes. After the resting
period, shape the dough, place in a greased loaf pan, and let rise until
double in size.
Preheat oven to 400°F and bake approximately 20-30 minutes until done.
