Cornbread: Basic Cornbread

Basic Cornbread (Corn sticks, Muffins, or Corn squares)

1+1/2 cups yellow corn meal
1 egg
1 Tablespoon oil
1 cup milk
butter or bacon grease for skillet


Preheat oven to 425°. Heat butter or bacon grease in skillet in hot oven to prepare for batter.

Combine corn meal and egg. Mix well. Add milk and stir until smooth. Quickly beat butter or oil into batter. Spoon batter into prepared hot skillet, filling about 2/3 full. Bake 15 to 20 minutes or until golden brown.
