Corn Bread

3/4 cup all-purpose flour
1-1/2 teaspoons baking powder
1 tablespoon brown sugar
1 teaspoon salt
1-1/4 cup yellow cornmeal
1/2 cup (1 stick) unsalted butter
1 cup milk
1 egg
1 ear roasted corn, kernels only


Butter a 9-inch round cake pan generously.

In a large bowl, combine flour, baking powder, brown sugar, salt and cornmeal. In a small saucepan, combine butter and milk, heating just enough to melt butter. In a separate bowl whisk egg slightly, then whisk in warm butter/milk mixture.

Make a well in the center of the dry ingredients and pour in egg/butter/milk mixture. Sprinkle roasted corn kernels over and stir to combine. To roast corn, remove husk and cook in oven at 400 degrees or place on grill until a toasty brown. Pour batter into cake pan and bake at 400 degrees for 20-25 minutes or until a skewer inserted into bread comes out clean.

Serve hot wedges with pats of butter or apple butter.
