Cornbread
Serves 6
1 cup all-purpose flour
1 cup cornmeal
1/4 cup sugar
1 tsp. baking soda
1 Tbl. baking powder
3 Tbl. butter, melted and cooled
1 1/3 cups buttermilk
1 egg
Preheat the oven to 425.
Butter a 8" square pan.
Stir together the flour, cornmeal, sugar, baking soda and baking powder.
In a small bowl, stir together the butter and buttermilk; beat in the egg.
Pour the liquid all at once into the dry ingredients, and stir only until combined. Do not overmix.
Pour into the pan and bake for 30 minutes.
