Cornbread: Pecan Cornmeal Rounds

Pecan Cornmeal Rounds

3/4 cup plus 2 tablespoons butter, softened
11/2 cups flour
1/2 cup yellow cornmeal
2 Tbsp sugar
3/4 tsp salt
1 egg, lightly beaten
3/4 cup chopped pecans
8 pecan halves (optional)


Beat the butter at medium speed with an electric mixer until creamy. Add flour, cornmeal, sugar, salt and egg. Mix at low speed until blended. Stir in the chopped pecans. Wrap the dough in plastic wrap and chill for 1 hour.

Turn the dough out onto a lightly floured surface. Roll to 1/2 inch thickness. Cut into 8 shapes with 3 inches daisy or round cookie cutter. Press a pecan half into the center of each round if desired. Bake at 350o for 20 minutes or until lightly browned. Remove from pan and cool on a wire rack.
