Cornbread: Southern Corn Bread

Southern Corn Bread

2 cups corn meal
1/2 cup flour
1 tsp. baking powder
1 tsp. salt
1 cup buttermilk
1 egg
1/2 cup water
1/2 tsp. baking soda
1 TBSP. Crisco
** if using self-rising flour omit baking powder and baking soda


Preheat oven 425º.

Mix corn meal, flour, baking powder, baking soda, and salt together in mixing bowl. Add buttermilk, and egg; beat well. Add water to make a medium-thick batter. Grease your skillet with Crisco or other fat., pour in the batter and bake at 425º for 20 -25 mins, or till golden brown top.

You can also melt your fat in a hot skillet, then pour in the batter. it gives a "crunchy" edge to the corn bread. If you like the sweet taste to your corn bread add 1 tsp. Sugar.
