Blue Cornmeal Crepes

1/4 c All-purpose flour
1 ts Salt
1/4 c Blue corn meal
4 Eggs
1 c Milk
2 oz Clarified butter


Mix dry ingredients and add to the wet ingredients. Let stand 1/2 hour. Using non-stick pan with 1 ounce of liquid, roll around the pan until the edges turn brown. Flip over and cook for 5 seconds. Remove from the pan and fill with favorite stuffing--salsa, crabmeat, etc.

Blue Corn Meal Crepes

1 cup Tamaya brand blue cornmeal
1 1/4 cups all-purpose flour
1/2 teaspoons salt
1/2 teaspoons baking powder
2 tablespoons sugar
2 cups milk
2 eggs
2 tablespoons melted margarine
1/2 tablespoons vanilla


Combine dry ingredients Stir in remaining ingredients. Blend in blender for 1 minute. Cook in 6" x 8" skillet as for any other crepes.
