Dumplings

2 cups flour
3 tsp. baking powder
1 tsp. salt
2 tbsp. minced parsley
4 tbsp. shortening
3/4 to 1 cup milk


Combine flour, baking powder, salt and parsley in a bowl. Cut in the shortening until the mixture looks like coarse crumbs. Add the 3/4 cup milk and stir briefly with a fork. Add only enough of the remaining 1/4 cup milk to make the dough hold together.

Drop by spoonfuls on top of the simmering broth. Cover and steam for 20 minutes without lifting the lid.
