Gordita Potato-Corn

POTATO CORN GORDITA

3 large potatoes, steam baked
1/4 lb. corn Quaker flour
1/4 lb. white cheese
1 avocado (soft)
1 medium fry whole chicken

Blend steam potatoes. Blend Quaker corn flour.

Add cheese (shredded) to these two blended mixtures.

Prepare 4-inch thick corn gorditas (tortillas) and fry in hot cooking oil.

Drain excess oil, paper towel dried.

Make a 2-inch opening to one side of gordita and insert pieces of chicken and avocado.

Serve while hot. (Serving for 12 people.)
