Mozzarella and Tomato Donuts

8 oz white bread flour
1/2 tsp salt
Freshly ground black pepper
2 tsp easy-blend dry yeast
1 oz grated Parmesan
1 tbs olive oil
100ml hand hot water
1 small egg, beaten
4 pieces sun-dried tomato
2 3/4 oz mozzarella
Vegetable oil for deep frying


Make dough - mix flour, salt, pepper, yeast and Parmesan in a bowl.

Mix oil and water together then add to flour with egg and mix to a soft dough.

Turn onto a lightly floured surface and knead for about 5 minutes until dough is smooth and no longer sticky.

Cut each piece of tomato into six.

Cut mozzarella into 24 pieces.

Divide dough into 24 pieces and shape each piece into a ball.

Press out to flatten then place a piece of tomato and a piece of mozzarella
in center.

Draw dough up over filling and pinch to close.

Place on an oiled baking sheet, cover with greased plastic wrap and set aside to rise for 1 hour.

Heat oil until cube of bread rises to surface and is golden.

Fry doughnuts, a few at a time, for about 5 minutes until deep golden brown.

Drain on kitchen paper and serve sprinkled with grated Parmesan.
