Muffins Banana-Nut Muffins

Banana-Nut Muffins
Makes 1 dozen

1 cup whole wheat flour
1 cup all purpose flour
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon nutmeg
Pinch salt
2 eggs
1/2 cup honey
1/4 cup safflower oil
1 teaspoon vanilla
3 ripe bananas mashed
1/4 cup plain yogurt
1/2 teaspoon grated lemon zest
1/2 cup chopped walnuts


Heat oven to 375 degrees. Line pan with muffin papers or grease, generously.

Sift flours, baking soda, spices, and salt into large bowl. Beat eggs, honey, oil, and vanilla in separate bowl, blend banana, yogurt, and lemon zest into egg mixture. Quickly stir wet ingredients, along with nuts, into dry ingredients just until flour is moistened. Batter is thick.

Spoon batter into muffin cups, bake til muffins are lightly browned about 20 minutes.

Serve warm, or cool on a rack.
