Banana Cranberry Muffins
1 1/4 c all purpose flour
1/2 c old-fashioned rolled oats
1 1/2 t ground cinnamon
1 t baking powder
1/2 t baking soda
1/2 t ground nutmeg
1/2 t ground allspice
1/2 t salt
1/2 c dried cranberries
3/4 c low-fat buttermilk
1/3 c maple syrup
1/4 c canola oil
2 eggs, beaten
2 medium bananas, mashed
Preheat oven to 325.
Lightly coat muffin tin with non-stick spray. In large bowl, combine,
flour, oats, cinnamon, baking powder,baking soda, nutmeg, allspice and
salt. Add cranberries and stir well.
In another bowl, combine buttermilk, maple syrup, oil, eggs and mashed
bananas.
Combine contents of both bowls, folding until just incorporated. Spoon
into muffin tins, filling to just below top.
Bake for 25 minutes.
