Banana Poppy Seed Muffins

2 ripe medium bananas, peeled
1 egg
3/4 cup sugar
1/4 cup oil
2 tsp. grated orange peel
2 cups flour
1 1/2 tbsp. poppy seeds
2 tsp. baking powder
1/2 tsp. salt

Citrus Glaze:
1 1/4 cup powdered sugar
1/4 cup orange juice
1 tsp. grated orange peel
1 tsp. vanilla


Preheat to 375. Puree bananas in a blender to equal 1 cup.

In a medium bowl, mix banana puree, egg, sugar, oil and orange peel. Mix until well blended.
Combine dry ingredients in a large bowl. Add banana mixture and stir unitl evenly moistened.
Spoon into greased 2 1/2 inch muffin cups. Bake for 20 to 25 minutes or until a wooden toothpick inserted in the center comes out clean.

Remove from pans and cool on wire racks. Glaze while warm but not hot.

Glaze: Combine all ingredients in a medium bowl and stir until smooth.
