Basic Mini-Muffins or Coffee Cake

1 1/2 cups all-purpose flour
1/2 cup sugar
1/4 teaspoon salt
2 teaspoons baking powder
3/4 cup milk
1 egg -- lightly beaten
1/3 cup butter -- melted
In a bowl, mix flour, sugar, baking powder and salt. In another bowl mix milk, beaten egg, and butter. Stir flour mixture into milk just to combine.
Notes : Use to make Orange Chocolate Mini-muffins or Pecan coffee Cake

Chocolate Orange Mini-Muffins

1 1/2 teaspoons grated orange peel
1/3 cup pecans -- finely chopped
1/2 cup miniature chocolate chips
Stir orange peel, pecans and chocolate chips into prepared muffin base. Spray mini-muffin pans with Pam.
Portion batter into 24 cups. Bake at 375ºF. for about 20 minutes or until set and golden.
