Muffins (Basic Recipe)

BASIC MUFFINS

Non-stick cooking spray
1 lg. Egg
1 c. Milk
1/4 c. Cooking oil or melted shortening
2 c. Flour, sifted
1/4 c. Sugar
3 ts. Baking powder
1 ts. Salt
****ADDITIONS:****
1 c. Chocolate chips, M&M's, or any candy bits
3 drops Food coloring, your choice
1 1/2 c. Fresh berries or banana slices
1 c. Chopped walnuts, almonds or pistachios
1 TB Grated orange rind
1 ts. Orange or lemon extract
1 1/2 c. Your favorite cereal, from wheat flakes to Fruit Loops
1/2 c. Raisins, Craisins or chipped dried fruit mixture
1 c. Combination of fresh fruit & nuts of your choice
1/2 c. Chopped maraschino cherries
1/2 TB Cream cheese dapped into each muffin well after filling with batter

1. Preheat oven to 400 degrees. Lightly spray medium sized muffin tins with Pam; set aside.

2. In medium-sized mixing bowl, lightly beat 1 egg with a fork. Add milk, cooking oil or melted shortening,flour, sugar, baking powder & salt. thoroughly blend all ingredients with a whisk or mixer. DON'T OVERMIX; stir or beat just until the flour is moistened. (It's fine if the batter appears a bit lumpy.)

3. Choose any ot the additonal ingredients & add to batter; stir gently to barely combine.

4. Fill each of 12 muffin cups about 2/3 full; bake about 20-25 minutes until golden brown. Cool at least 20 minutes before serving.
