Blueberry Orange Muffins
1 1/2 cups all purpose flour
3/4 cup whole wheat flour or bran flakes
1 1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1 large egg
1 large egg white
2/3 cup packed light brown sugar
1 cup nonfat plain yogart
2 tsp. orange zest
1/3 cup orange juice
2 tbsp. Canola oil
1 tsp vanilla
1 1/2 cups blueberries
1 tbsp. granulated sugar
Preheat oven to 400F
Coat 12 muffin tin cups with cooking spray.
,br> In a large bowl, whisk all purpose and whole wheat flours, baking powder, baking soda, salt and cinnamon.
In a medium bowl, whisk egg, egg white and brown sugar until smooth. Add yogurt, orange zest, orange juice, oil and vanilla; whisk until blended.
Make a well in the dry ingredients, add wet ingredients and stir with a rubber spatula until just combined. Fold in blueberries. Spoon batter into prepared muffin cups/ Spinkle tops with granulated sugar.
Bake 20 to 25 minutes or until tips are golden and spring back when touched lightly.
Makes 1 doz muffins. .
