BLUEBERRY AND CINNAMON MUFFINS
Makes..8 muffins
Preheat oven to 375*F (190*C) gas mark 5 and lightly grease 8 deep muffin tins.
Ingredients
4ozs (120g) flour
1 tablespoon baking powder
pinch of salt
2 1/2 (70g) light brown sugar
1 egg
6 fl ozs (175ml) milk
3 tablespoons vegetable oil (*)
2 teaspoons ground cinnamon
4 ozs (120g) fresh or thawed, frozen blueberries
Method
1..With an electric mixer, beat the first 8 ingredients together until smooth.
2..Fold in blueberries.
3..Spoon the mixture into the prepared muffin cups, filling them 2/3
full. If using a 12 cup muffin pan, place
water in the other 4, for more even cooking.
4..Bake until a skewer inserted in the centre of a muffin comes out clean, about 25 minutes.
5..Let cool in tins on a wire rack for 10 minutes, then unmould the
muffins on to the wire rack and allow to cool
completely.
