BRAN AND FRUIT MINI-MUFFINS - fat and sugar free
1 cup Nabisco 100% bran cereal
1/2 cup nonfat (skim) milk
2 Tbls. all fruit sweetener (Polander is one brand)
egg substitute to equal 1 egg
1/4 tsp. vanilla
1/2 cup all-purpose flour
1 tsp. baking powder
1/2 cup finely chopped fresh or frozen fruit (your choice, apple, banana, cherries, pineapple, strawberries, peaches or any prepared without sugar)
Preheat oven to 375.
Coat miniature muffin tins with nonnstick spray. In a small bowl, combine bran, milk, sweetener, egg product and vanilla. Set aside for 5 minutes.
In a larger bowl, combine flour and baking powder. Stir bran mix into flour just until blended. Carefully stir in fruit. Spoon into prepared tins.
Bake 12 to 15 minutes, until toothpick inserted in center comes out clean. Remove to a rack to cool.
