BREAKFAST MUFFINS
1/2 Cup low fat yogurt
2 egg whites, lightly beaten
3 1/2 tables. orange juice concentrate
1/2 cup soaked raising (soaked in hot water to plump, drained)
1/2 cup rolled oats
1/2 cup all-purpose flour
1/2 tea. ground cinnamon
1/2 tea. baking soda
Preheat oven to 375.
Mix first 5 ingred. in bowl and set aside to soak 10 minutes.
Spray 6 muffin cups with no-stick spray.
Combine flour, cinnamon
and baking soda in
a small bowl, then add to yogurt mixture. Mix until combined.
Spoon in to muffin cups. Bake 25 min, until golden brown and tested done.
6 muffins - 120 calories per muffin.
