Cheddar Pepper Muffins
2 cups flour
1 tbsp. sugar
1 tbsp. baking powder
1 tsp. coarsely cracked black pepper
1/2 tsp. salt
1 1/4 cups milk
1/4 cup vegetable oil
1 egg
1 cup (4 oz.) shredded sharp Cheddar cheese
Preheat to 400. Grease 12 muffin cups (2 1/2 inch size).
Combine dry ingredients in a large bowl. In a smaller bowl, combine milk, oil and egg mixing well. Add liquids to dry ingredients and stir just until moistened.
Fold in 3/4 cup cheese. Spoon into muffin cups, then sprinkle remaining cheese on tops. Bake for 15 to 20 minutes or until light golden brown. Cool in pan for 5 minutes, then remove and serve warm.
Makes 12 muffins.
