Chocolate Chip Macadamia Nut Muffins

1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup butter, melted
2/3 cup sour cream
1/4 cup corn syrup
1 egg
1 1/2 cups chocolate chips
3 1/2 oz jar macadamia nuts, quartered
12-15 whole macadamia nuts for the muffin top


Preheat oven to 375 degrees. Combine flour, baking soda and salt in a large bowl. In a medium bowl mix the melted butter, sour cream, corn syrup and egg. Make a well in the dry ingredients and add the wet ingredients. Stir in the chocolate chips and macadamia nuts. Line muffin pans with paper muffin cups. Fill muffin cups with batter. Place a whole macadamia nut on top of each muffin. Bake at 375 degrees for 15 minutes. Makes 12-15 muffins.

Notes: I added about 4-5 oz. of macadamia nuts to the recipe, and suggest baking at 350 degrees--the tops and the macadamia nut can easily brown too much. The muffin mix is very thick and they do not raise much at all. I will fill the muffin papers fuller next time.

These muffins are not very sweet, but are balanced well with the chips and nuts.
