Cinnamon Puffins

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon ground nutmeg, divided
1/2 teaspoon salt
1 cup sugar, divided
1/3 cup shortening
1 egg
1/2 teaspoon vanilla extract
1/2 cup milk
1/2 cup butter or margarine
1 teaspoon ground cinnamon


Preheat oven to 350 degrees.

In a medium bowl, combine flour, baking powder 1/2 teaspoon nutmeg, and salt. In another medium bowl, beat 1/2 cup sugar, shortening, egg, and vanilla until well-blended. Add the flour mixture and milk, alternating the two, twice. Mix until smooth, but do not overbeat.

Fill each cup of a lightly greased 12-cup muffin pan (like I said, I only got nine) 2/3 full with batter. Bake 20 minutes or until light golden brown.

Melt butter. In a small bowl, combine remaining 1/2 cup sugar, cinnamon, and remaining 1/2 teaspoon nutmeg. While puffins are warm, dip in butter, then in sugar mixture, coating thoroughly. Store in an airtight container.
