Coffee Nut Muffins
Prep time: 20 minutes
Cooking Time: 20 minutes
Yield: 12 regular muffins

2 cups (250g) self raising flour
3/4 cup (140g) soft brown sugar
1-1/4 cups (140g) ground hazelnuts
1/4 cup (30g) chopped roasted hazelnuts
1/4 cup (20g) instant coffee
1-1/4 cups (315 ml) buttermilk
2 eggs
(125g) unsalted butter, melted and cooled

Preheat the oven to moderate (180 C ) 350 F. Line 12 regular muffin holes with muffin papers. Sift the flour into a large bowl and add the sugar and nuts. Make a well in the centre.

Stir the coffee into the buttermilk until dissolved. Whisk in the eggs and butter. Pour into the well. Fold until just combined - the batter should be lumpy.

Divide among the muffin holes. Bake for 20 minutes, or until a skewer inserted in the middle comes out clean. Cool briefly, then transfer to a wire rack to cool completely. Serve with Glossy chocolate topping.
