Cream Cheese Muffins
3 c. flour
3/4 c. sugar
4 tsp. baking powder
Pinch of salt
1 (8 oz.) pkg. Philadelphia Brand® cream cheese (room temperature)
2 eggs
1 c. milk
1 tsp. vanilla extract
1/2 c. butter, melted and cooled
Extra sugar (for sprinkling)
Preheat oven to 400 degree oven and grease a large muffin tray and 2 cups on a second tray; grease tops of pans lightly as well.
Sift flour, sugar, baking powder and salt into a large bowl.
In blender, combine cream cheese and eggs; blend them until they are completely smooth.
Add milk, vanilla and melted butter; continue to work batter until ingredients are thoroughly mixed.
Pour liquid ingredients into bowl of dry ingredients; mix them with a wooden spoon until they are completely combined.
Spoon batter into prepared muffin cups, piling it well into each cup.
Sprinkle extra sugar onto each one.
Bake muffins 25 to 30 minutes, or until they are firm and just beginning to brown at edges.
Cool slightly before lifting from muffin cups.
Serve warm.
