Double Chocolate Chip Muffins
3 oz. unsweetened chocolate
1 c. sugar
1/2 c unsalted butter, softened
1/2 c. sour cream
1/2 c. milk
2 c. flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 (12 oz.) bag semi-sweet chocolate chips
Preheat oven to 400.
In microwave-safe bowl, melt chocolate on med-high at 25 second intervals, stirring in between, until smooth.
In large bowl of an electric mixer, cream sugar and butter. Beat in eggs, then add sour cream and milk.
In a small bowl, stir together the dry inredients. Add flour mixture to butter mixture and stir by hand.
Stir in melted chocolate and chocolate chips
Spray 6 giant-size or 12 regular-size muffin cups with non-stick spray. Fill 3/4 full.
Bake giant-size for 25 minutes or regular size for 20 minutes, or until toothpick inserted in center comes out clean.
Makes 6 giant or 12 regular- size muffins.
