Ham & Asparagus Brunch Muffins
2 tablespoons butter or margarine
1/4 cup flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
3 hard-cooked eggs, diced
3 english muffins, split
6 slices smithfield ham
1 15 oz can asparagus spears, drained
4 ozs. cheddar or gruyere cheese, shredded
Melt butter in small saucepan. Stir in flour, salt and pepper; cook until mixture is smooth and bubbly. Gradually add milk. Heat, stirring constantly, until mixture boils and thickens. Fold in diced eggs.
Arrange muffin halves on baking sheet. Broil until lightly toasted. Spread with butter. Top each with ham slice and asparagus spears. Broil 3- 5 minutes or until thoroughly heated. To serve, pour egg sauce over muffins and garnish with cheese.
