Happy Muffins
MIX DRY INGREDIENTS:
1 1/2 C. flour
1 tsp. bkg. pdr.
1 tsp. bkg. soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. powdered ginger
1/4 tsp. allspice
3/4 C. brown sugar
MIX WET INGREDIENTS:
1 egg
1/2 C. buttermilk or yogurt
1/4 C. oil
1/2 tsp. vanilla
1 - 14 oz. can crushed pineapple (drained)
FOLD IN LAST:
3/4 C. grated carrot
1/2 C. raisins
Preheat oven to 400
Mix dry and wet ingredients together, folding in carrots and raisins last.
Pour into greased muffin tins. Bake for 15 - 17 minutes.
