HONEY PUMPKIN RAISIN MUFFINS
1 c. raisins
2 c. flour
1 c. sugar
2 ts. baking powder
1 ts. baking soda
1 ts. salt
1 ts. cinnamon
1/2 ts. nutmeg
1/2 c. canned pumpkin
1/4 c. honey
1/4 c. non-fat milk
1/4 c. vegetable oil
1 lg. egg
1 egg white
Preheat oven to 350 degrees. Grease a 12-cup muffin pan.
Cover raisins with hot water (or spiced rum) & soak for 5 minutes; set
aside.
Mix together the 7 dry ingredients. Add the next 6 ingredients & stir
until just combined.
Drain raisins & fold into mixture; pour batter into
prepared muffin pan.
4. Bake for 25 minutes, or until golden brown.
Yield: 12 muffins
