Morning Glory Muffins

1 1/2 Cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. ground ginger
1/8 tsp. allspice
3/4 Cup brown sugar
1 egg
1/2 Cup buttermilk or yogurt
1/4 Cup oil
1/2 tsp. vanilla
1 (14 oz.) can crushed pineapple, well drained
3/4 Cup grated carrots
1/2 Cup raisins


Preheat oven to 375-400 degrees. Combine the first 9 ingredients, mixing well. Combine the remaining ingredients, except carrots and raisins.

Add mixed wet ingredients to dry ingredients. Fold in carrots and raisins.

Fill greased muffin tins 2/3 full. Bake 15-17 minutes.
