Mountain Morning Muffins

3/4 cup honey
1/2 cup brown sugar
2 sticks margarine, softened
1 teaspoon vanilla
1/2 cup egg substitute
2 tablespoons milk
1 (15-oz.) jar plain applesauce
2-1/2 cups unbleached flour
1-2/3 cups graham cracker crumbs
1 teaspoon cinnamon
2-1/2 teaspoons baking soda
1/2 teaspoon allspice
1 cup chopped walnuts or pecans
1 cup raisins


Preheat oven to 350 degrees F.

Blend first 6 ingredients (honey thru milk) in mixer on medium speed until light and fluffy. Beat in applesauce. Mix dry ingredients together, add gradually to applesauce mixture. Beat just until blended - do not over-beat. Fold in nuts and raisins.

Line muffing tins with paper or foil baking cups if desired. Fill each cup 3/4 full. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from tin.

Makes about 2 dozen muffins.
