Oatmeal Muffin Mix
2-1/2 cups whole wheat flour
1-1/4 cups flour
4 teaspoons baking soda
3/4 teaspoon salt
4 cups quick cooking rolled oats
1-1/4 cups brown sugar
3/4 cup powdered buttermilk
In a large bowl combine ingredients until well blended.
This will make enough mix for about 48-50 muffins.
For 12 muffins: Put 2-1/2 to 2-3/4 cups mix in bowl. In measuring cup beat together 1 egg, 1 cup water and 1/4 cup oil. Pour this into well in center of dry ingredients. Stir just until blended. Generously grease 12 muffin cups. Fill cups about 3/4 full. Bake about 25 minutes at 375.
You can add chopped nuts, shredded coconut or dried fruit if you like -- about 1/2 to 2/3 cup.
You might like to try experimenting with your favorite muffin recipe by eliminating any "wet" ingredients and
replacing the milk with powdered milk or powdered buttermilk.
