Oatmeal Muffins

1 cup all purpose flour (I used 1/2 white and 1/2 wheat)
1 t. baking powder
1/2 t. salt
1/4 t. baking soda
1 cup quick-cooking oats
1 cup buttermilk
1 egg -- slightly beaten
1/2 cup packed brown sugar
1/3 cup butter -- melted
additonal brown sugar -- optional
additional quick oats -- optional


Grease 12 muffin cups or line with paper liners.

Combine flour, baking powder, salt, and baking soda in a small bowl, set aside.

Combine oats and buttermilk; add egg and mix well. Stir in 1/2 cup brown sugar and butter until combined. Stir in flour mixture until moistened. Spoon into prepared muffin cups, filling each 2/3 full. Sprinkle tops of muffins with additional brown sugar and oatmeal, if desired.

Bake in a 400 degree oven for 18-20 minutes or until wodden toothpick inserted in centers comes out clean (mine were done in 18 min.). Cool 5 minutes before removing from pan. Serve warm with spiced blueberry conserve.

Yield: 12 muffins

Per muffin: 163 calories, 7 g. fat, 1 g. fiber
