ONION CHIVE MUFFINS
3/4 cup finely chopped onion
1 tsp. oil
1-1/2 cups all-purpose flour
1/4 cup chopped fresh chives
2 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 cup buttermilk
1/4 cup oil
1 egg, slightly beaten
Preheat oven to 375 degrees.
Grease bottoms only of 12 muffin cups or line with paper baking cups.
In a small skillet, over medium heat, cook and stir onion in 1 tsp. oil
until crisp-tender; set aside.
In a large bowl, combine flour, chives, sugar, baking powder, salt and
baking soda.
In a small bowl, combine cooked onions, buttermilk, 1/4 cup oil and egg;
mix well.
Add to dry ingredients; stir just until moistened.
Fill prepared muffin cups about 3/4 full.
Bake for 12 to 14 minutes or until toothpick inserted in centre comes out
clean. (Muffins will be very light in
colour). Immediately remove from pan.
Makes 12 muffins.
