Potato Muffins

1 cup Flour
1 cup Potato Starch
1 tbl. Sugar, (Optional
1 tbl. Baking Powder
1/2 tsp. Salt
1 1/2 tsp. Thyme, Fresh, Chopped, Or 1/2 tsp. Dried Thyme
1 cup Milk
1/2 cup Potato, Cooked, Mashed, Warm
1 Egg
1/4 cup Unsalted Butter, Or: Margarine
1/3 cup Swiss Cheese, Or Cheddar, Finely Grated


Preheat oven to 400øF. Butter standard muffin tins.

In a large bowl, stir and toss together the flour, potato starch, sugar (if used), baking powder, salt and thyme. Set aside.

In a medium bowl whisk together the milk and mashed potatoes, then add the egg, melted butter (or margarine) and cheese, and whisk until well mixed. Add to the combined dry ingredients and stir just
until blended. Spoon into the prepared muffin tins, filling each cup about 3/4 full.

Bake until a toothpick inserted in the center of a muffin comes out clean, 15 to 18 minutes. Cool in the tins for 3 minutes, then remove.

Makes 12 standard muffins Note; I have made these using no sugar and low-fat margarine, and do not notice much difference in the quality.

Sweet Potato Muffins

1 cup sweet potatoes
1/2 cup skim milk -- at room temperature
1/3 cup applesauce -- at room temperature
1 egg white -- whipped
1 1/3 cups unbleached flour
3/4 cup granulated sugar
2 tsps. baking powder
2 tsps. baking soda
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 cup raisins
1/2 tsp. salt


Preheat oven at 350. Prepare 12 muffin pans with cooking spray and flour.

In a mixing bowl , combine sweet potatoes, milk, applesauce, and egg white. In another mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, raisins, and salt. Mix wet ingredients with dry ingredients just until moistened. Use an ice cream scoop to fill muffin tins about full. Bake for 25 minutes.

Sweet Potato Muffins

1 1/4 cup Sugar -- plus:
2 tbl. Sugar
1 1/4 cups Mashed cooked sweet potatoes yams (fresh or canned)
1/2 cup Butter -- room temperature
2 large Eggs -- room temperature
1 1/2 cup Flour
2 tsp. Baking powder
1 tsp. Cinnamon
1/4 tsp. Nutmeg
1/4 tsp. Salt
1 cup Milk
1/2 cup Chopped raisins
1/4 cup Chopped walnuts or pecans
1/4 tsp. Cinnamon


Thoroughly grease 24 muffin cups or prepare with paper liners. Preheat oven to 400 degrees F.

Beat 1-1/4 cups sugar, sweet potatoes and butter until smooth. Add eggs and blend well. Sift together flour, baking powder, spices and salt. Add alternately with milk to sweet potato mixture, stirring just to blend; do not over mix. Fold in raisins and nuts. Spoon into muffin cups.

Mix remaining sugar with cinnamon and sprinkle over muffins. Bake until muffins test done, about 25 to 30 minutes. Serve warm.

Muffins may be frozen and reheated.
