Rhubarb Mufins
WET INGREDIENTS:
2 eggs
1/4 cup oil
3/4 cup sugar
2 cups milk
1/2 cup yoghurt or sour cream
1 teaspoon vanilla
2 cups rhubarb - finely chopped
DRY INGREDIENTS:
4 cups S.R. flour
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
METHOD:
Pre-heat oven to 200*C
Grease muffin pans.
Thoroughly combine all wet ingredients, lastly adding the rhubarb.
Combine the dry ingredients, then fold into the wet mixture.
Place into prepared muffin pans and sprinkle with cinnamon sugar and bake
in pre-heated oven for 25 minutes.
