Tea Muffins
source: 1982 Southern Living Annual Recipes
1/2 c. butter or margarine, softened
3/4 c. sugar
1 egg
2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 c. milk
1/4 c. firmly packed brown sugar
2 tbsp. finely chopped walnuts
Cream butter well. Gradually add sugar, beating until mixture is light and fluffy. Add egg and mix well.
Combine dry ingredients, add to creamed mixture alternately with milk, beginning and ending with dry ingredients.
Spoon into greased muffin pans and fill half full.
Combine brown sugar and walnuts; sprinkle evenly over the batter. Bake at 350 for 20 minutes.
makes 2 dozen.
