Tsimmis Muffins

1 sweet potato, shredded
2 carrots, shredded
1 1/2 cups matzo meal
1/2 cup room temperature butter
1/4 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 cup sugar


Mix together butter and sugar, add matzo meal, salt, cinnamon, ginger and salt. Add shredded carrots and sweet potatoes with hands until thoroughly mixed. Put in lightly greased muffin pan.

Lay a piece of parchment over top and bake at 375 for 20 minutes. Then, remove parchment and brown top at 425 for 5-10 minutes more. Can be baked ahead and browned later.

One nice addition is adding 1/2 tsp of prune juice on top before browning for added color and sweetness.
