Semi Whole Wheat Soda Bread

1-3/4 cups whole wheat flour (divided 1-1/2 + 1/4)
1-1/2 cups all-purpose, unbleached flour
1-3/4 tsp. baking soda
1 tsp. salt
2 tsp. sugar
1-3/4 cups buttermilk

Preheat oven to 350 degrees. Butter and flour an 8-1/2 x 4-1/2" loaf pan.

In a large bowl, whisk together 1-1/2 cups whole wheat flour, all-purpose flour, baking soda, salt and sugar. Add buttermilk and stir with a spoon until thoroughly combined. Add remaining 1/4 cup whole wheat flour and stir until combined and dough holds together in a ball.

Turn out onto lightly floured surface and gently knead with lightly floured hands to shape dough into shape of pan. About 6 or 7 strokes. Place dough in pan (flatten slightly to almost fill bottom of pan) and sprinkle top with a little whole wheat flour.

Bake for 45-50 minutes. Turn out onto wire rack to cool. Serve warm or at room temperature.
