Easy Dinner Rolls
2 1/4 tsp yeast (1 pkg)
2 T sugar
1 tsp salt
2 T shortening
2 1/4 cup flour, divided
Preheat oven to 450.
Dissolve yeast in warm water in a large bowl. Add sugar, salt, shortening,
1 cup flour and beat until smooth using a mixer.
Stir in 1 1/4 c. flour and continue beating until smooth. Scrape batter
from side of bowl. Cover and let rise in a warm place until double.
Stir down batter and spoon into greased muffin pan.
Let rise until double, about 30 minutes. Bake about 15 minutes.
Make about a dozen rolls.
