Henrico County School Rolls
Yields 12

1 1/4 cups warm water (110 F)
1 1/2 packets of quick-rising yeast
1/4 teaspoon sugar
3 level cups of bread flour
2 1/2 Tablespoons sugar
1 1/2 teaspoons salt
2 Tablespoons shortening
2 Tablespoons powdered milk
1 dash of love


In a small bowl, combine the first 3 ingredients. Stir and set aside as yeast starts to activate. In a large bowl, combine the remaining ingredients. Blend in mixer (with dough hook beaters) and slowly add liquid to dry ingredients. Mix on medium speed until dough is smooth, elastic and leaves the sides of the mixing bow.

Allow it to rise for 30 minutes or until about double in size. Punch it down and let it rest for 10 minutes.
Grease your fingers with shortening and while squeezing through your forefinger and thumb, pinch off 12 even size balls of dough. Place in a greased bun pan and let them rise for 20 minutes, until they double again in size.

Bake in a pre-heated 400 F oven for 15-20 minutes until golden brown. After removing from oven, brush with melted butter and enjoy! Serve with lots of whipped butter or if counting fat grams, use fruit spreads.
