No-Knead Refrigerator Rolls
2 pkgs. yeast
2 cups warm water
1/4 cup shortening
1/2 cup sugar
2 tsp. salt
6 1/2 to 7 cups of flour
Preheat oven to 400.
Dissolve yeast in water. Add sugar, salt and 1/2 cup of flour. Beat 2 minutes.
Add egg and shortening. Mix remaining flour until dough is easy to handle.
Place in greased bowl in refrigerator for two hours, punching down dough as it rises.
Two hours before baking shape into desired rolls.
Cover and let rise 1 1/2 to 2 hours, until double in size. Bake on lightly greased baking sheets 12-15 minutes. Makes 4 dozen rolls. Keeps 4-5 days in frige.
